Recipe Debut

I've thought to myself that I need to post some of my favorite recipes. I have an unhealthy addiction to trying out new recipes. If Todd had a nickel for every time he heard, "I've never made this before..."- we'd be rich!
I made this Barley and Black Bean Burrito recipe for the first time last night. My Aunt Kris sent this recipe to me after I told her that I needed to make a better effort at using less meat.
This recipe is incredibly delicious. It is so simple. It (literally) took me 15 minutes to prepare. And it is CHEAP!! Although I would recommend adding salsa, sour cream, and avocado/guacamole to them, so that adds to the cost, but still, way cheap. Oh, and if your kids are like, "what the heck is barley"-- just tell them it's rice.

Oh, and don't forget the tortillas.

1 15oz can black beans, drained and rinsed

1 10oz. can tomatoes with green chilies, undrained

1 C barley, uncooked

2 C chicken broth

¾ C corn

¼ C green onion, chopped

1 clove garlic

1 T lime juice

1 t chili powder

1 t cumin

1/2 t cayenne pepper

Throw the ingredients in a crockpot and cook on low for 4-6 hours (I did 4).
